The Most Versatile Summer Side

M and I are fairly famous for our corn, walnut, and feta cheese salad. Perfect warm or chilled, with pretty much any main course, this salad is sure to earn you raves at any picnic/BBQ this summer. It also makes a great leftover to brown-bag to the office, making it an all-around winner for these brooklyn bitches on a budget.

As a bonus, most of the ingredients can be purchased at trader joe's. As long as you don't mind the line, bring your ipod and dance your way through the aisles of extremely affordable ingredients.

1 c. walnuts
4 c. fresh corn kernels
2 jalapenos, seeded and thinly sliced
2 tbs fresh lime juice
2 tbs extra-virgin olive oil
kosher salt/pepper
1/2 c. crumbled feta cheese (2 oz)

1. heat oven to 400 degrees.
2. spread the walnuts on a rimmed baking sheet and toast until fragrant, 6-8 minutes. let cool and roughly chop.
3. in a large bowl, combine the corn, jalapenos, lime juice, oil, walnuts, 1/2 tsp salt, and 1/4 tsp pepper. sprinkle with feta before serving.
