Pomme Frites for Brooklyn Bitches


Craving the thick, salty fries from Pomme Frites and the creamy mayonnaise dipping sauces but not the hefty price tag for such a treat? We’ve spent more than our share of hard-earned dollars just for a large paper cone of these fried potatoes.

It’s much easier than you think to recreate the frites from this favored Manhattan institution- all you need are some russet potatoes!

2 lbs russet potatoes, scrubbed and cut lengthwise into 1/2 –in-thick wedges
2 tbs olive oil
salt and pepper
1 c mayonnaise
2 tbs fresh lemon juice
1 clove garlic, finely chopped
1 ½ tsp paprika

  1. Heat oven to 400 degrees.
  2. On a rimmed baking sheet, toss the potatoes, oil, 1 tsp salt, and ¼ tsp pepper.
  3. Roast until golden and crisp (45-50 min).
  4. In a small bowl, whisk the mayo, lemon juice, garlic, paprika, and ¼ tsp salt.
  5. Serve potatoes with mayonnaise aioli for dipping.
