Summer Pizza

This is one of my all time favorite meals- something that only tastes good in the summertime, requires minimal effort, and tastes even more sublime when enhanced with a glass of wine. The ingredients required are few, however, the quality of this meal is blown out of the water if you splurge on good mozzarella and fresh vegetables.

Technically, this dinner counts as a tart. Personally, I think it’s the best damn version of summer pizza I’ve ever been lucky enough to experience.

This recipe is GREAT- hence the highlighting, stars, and special label on top.
All you need:
1 tbs cornmeal
1 ball Trader Joe’s pizza dough*
1 1/2  zucchini, diagonally sliced
4 plum tomatoes, seeded and cut into thick slices
4 oz. fresh mozzarella cheese, sliced
1 tbs olive oil
handful of fresh basil leaves

1.    Preheat oven to 400.
2.   Line a baking sheet with wax paper/parchment paper (if you’re really going balls to the wall here). Unroll dough onto paper.
3.   Leave dough to stand for 5 minutes. Pat/pull dough into a 12-in square.
4.   Arrange zucchini and tomato over dough, being careful to leave a 1-in border.
5.   Sprinkle with salt and pepper.
6.   Fold over edges of dough to create crust.
7.   Bake for 15 minutes, or until dough is lightly browned.
8.   Top with cheese and bake an additional 5 minutes (or until cheese is perfect amount of melty).
9.   Drizzle with olive oil and sprinkle with basil.
10.  Cool for 10 minutes on a baking sheet/wire rack.

*NOTE about pizza dough: Did you know that you’re supposed to let it warm up for hours before you start baking it? Because this Bitch certainly had no idea. While running errands with Mama Bitch several weeks ago, my fondness for sprinkle cookies led me straight to our local Italian grocery. After begging my mother to whip up this summer pizza of my dreams and picking out the perfectly portioned ball of dough, we received quite a lecture from the cashier (who quite resembled Strega Nona, I might add) about the idiots who stick their pizza dough in the fridge until just before baking. Take it from me- and Strega- leave that dough on the counter!
